For the Crust
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and diced
3-4 tablespoons ice water
For the Filling
1 cup granulated sugar
2/3 cup dark corn syrup
1/3 cup unsalted butter
3 large eggs
1 1/2 cups pecan halves
1 teaspoon vanilla extract
Instructions
Prepare the Crust
Combine the flour and salt, in a mixing bowl.
Add the cold, diced butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
Form the dough into a disk shape, then cover it with plastic wrap and place it in the refrigerator for a minimum of 30 minutes.
Preheat the Oven
Preheat your oven to 375°F (190°C).
Roll Out the Crust
Roll out the chilled dough on a floured surface to fit your pie dish.
Carefully transfer the crust to the pie dish and trim any excess dough.
Prepare the Filling
In a saucepan, melt the butter and mix in the sugar and corn syrup.
Stir constantly until the mixture comes to a boil, then remove from heat.
In a separate bowl, whisk the eggs and slowly pour in the hot sugar mixture, whisking continuously.
Stir in the pecans and vanilla.
Bake the Pie
Pour the filling into the pie crust.
Cover the edges of the pie with aluminum foil to prevent over-browning.
Bake in the preheated oven for 40-45 minutes, or until the filling is set and slightly puffed.
Cool and Serve
Allow the pie to cool completely before serving.
