Ann Landers Pecan Pie

Ingredients

For the Crust

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 3-4 tablespoons ice water

For the Filling

  • 1 cup granulated sugar
  • 2/3 cup dark corn syrup
  • 1/3 cup unsalted butter
  • 3 large eggs
  • 1 1/2 cups pecan halves
  • 1 teaspoon vanilla extract

Instructions

Prepare the Crust

  • Combine the flour and salt, in a mixing bowl.
  • Add the cold, diced butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  • Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
  • Form the dough into a disk shape, then cover it with plastic wrap and place it in the refrigerator for a minimum of 30 minutes.

Preheat the Oven

  • Preheat your oven to 375°F (190°C).

Roll Out the Crust

  • Roll out the chilled dough on a floured surface to fit your pie dish.
  • Carefully transfer the crust to the pie dish and trim any excess dough.

Prepare the Filling

  • In a saucepan, melt the butter and mix in the sugar and corn syrup.
  • Stir constantly until the mixture comes to a boil, then remove from heat.
  • In a separate bowl, whisk the eggs and slowly pour in the hot sugar mixture, whisking continuously.
  • Stir in the pecans and vanilla.

Bake the Pie

  • Pour the filling into the pie crust.
  • Cover the edges of the pie with aluminum foil to prevent over-browning.
  • Bake in the preheated oven for 40-45 minutes, or until the filling is set and slightly puffed.

Cool and Serve

  • Allow the pie to cool completely before serving.
