  • 2 pounds Aunt Bessie chitterlings (cleaned and prepared)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon paprika
  • 1 bay leaf
  • 4 cups water or broth
  • 2 tablespoons vegetable oil

Instructions

  • Clean Chitterlings: Rinse the Aunt Bessie chitterlings under cold running water thoroughly. Use a knife to carefully remove any remaining fat or membrane. Cut them into bite-sized pieces.
  • Saute Aromatics: Heat vegetable oil in a large pot over medium heat. Add chopped onions and minced garlic. Sauté until they turn translucent.
  • Add Chitterlings: Add the prepared chitterlings to the pot. Stir well to combine with the sautéed aromatics.
  • Season: Add red pepper flakes, black pepper, salt, paprika, and bay leaf. Stir to coat the chitterlings evenly with the spices.
  • Simmer: Pour in water or broth to cover the chitterlings. Bring to a simmer over low heat. Cover and let it simmer for about 2-3 hours or until the chitterlings are tender and flavorful. Stir occasionally.
