Ingredients

  • 1 ripe pineapple, peeled and diced
  • 1 red bell pepper, seeded and diced
  • 1 small red onion, diced
  • 1 jalapeño pepper, seeded and minced
  • 1/2 cup white vinegar
  • 1/2 cup brown sugar
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • Salt, to taste

Instructions

  • In a medium saucepan, combine the white vinegar, brown sugar, ground ginger, ground cinnamon, and ground cloves and ground cloves and start cooking over medium heat until all the particles of sugar have dissolved.
  • Add the diced pineapple, red bell pepper, red onion, and minced jalapeño pepper to the saucepan. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the chutney has thickened.
  • Season with salt to taste.
  • Let the chutney cool down once removed from heat
  • Once the chutney has cooled down, transfer it to a large mixing bowl and refrigerate until ready to serve.
