Ingredients
1 lb stewing beef, cubed
1 cup pearl barley, rinsed
1 large onion, diced
3 carrots, sliced
3 celery stalks, chopped
4 cloves garlic, minced
8 cups beef broth
2 bay leaves
1 tsp thyme
Salt and pepper to taste
2 tbsp olive oil
Fresh parsley for garnish
Instructions
Sear the Beef
Heat olive oil in the pot over medium-high heat.
Add cubed beef, season with salt and pepper, and brown on all sides.
Saute Aromatics
Add diced onions, minced garlic, carrots, and celery.
Saute until vegetables are softened and aromatic.
Combine Ingredients
Pour in beef broth, add rinsed barley, bay leaves, and thyme.
Bring to a boil, then reduce heat and simmer for 45-60 minutes or until beef and barley are tender.
Season to Perfection
Customize the seasoning according to taste by making adjustments with salt and pepper.
