Ingredients

For Pasta

  • 8 oz (about 225g) bowtie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped

For Dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Boil the bowtie pasta according to the package instructions. Drain and let it cool.
  • In a large mixing bowl, combine the cooked and cooled pasta with cherry tomatoes, cucumber, red onion, black olives, feta cheese, and fresh basil.
  • In a separate small bowl, whisk together the dressing ingredients (see below).
  • Pour the dressing over the pasta mixture and toss gently to coat evenly.
  • Refrigerate to allow the flavors to meld together for at least 30 minutes.
