- 12 oz (340g) fettuccine pasta
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Drain and set aside.
Season the shrimp with Cajun seasoning, making sure they are evenly coated.
In a large skillet over medium-high heat, melt 2 tablespoons of butter with olive oil. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Take out the shrimp from the skillet and put aside.
Melt the remaining 2 tbsp of butter in the same skillet. Include minced garlic and cook for approximately 1 minute until it becomes fragrant.
Pour in the heavy cream and chicken broth, stirring constantly. Let it simmer for 2-3 minutes to thicken slightly.
Stir the grated Parmesan cheese until the sauce turns smooth and creamy.
Combine the cooked fettuccine and shrimp with the sauce. Thoroughly toss all the ingredients together until the pasta and shrimp are evenly coated with the sauce.
Season with salt and pepper to taste. Garnish with chopped parsley.
