- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups potatoes, peeled and diced
- 2 cups beef broth
- 1 can condensed cheddar cheese soup
- 2 cups milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: diced tomatoes, sliced green onions, cooked bacon bits
In a large pot or Dutch oven, cook the ground beef over medium heat until it is browned. Drain any excess fat.
Add the diced onion and minced garlic to the pot and sauté until the onion becomes translucent.
Stir in the diced potatoes, beef broth, condensed cheddar cheese soup, and milk. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes or until the potatoes are tender.
If you prefer a smoother texture, use a blender or immersion blender to puree some or all of the soup until desired consistency.
Stir in the shredded cheddar cheese until it is fully melted and thoroughly incorporated into the soup. Season with salt and pepper to taste.
