Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 slices fresh mozzarella cheese
  • 2 large tomatoes, sliced
  • Fresh basil leaves
  • Balsamic glaze, for drizzling

Instructions

  • Preheat your oven to 400°F (200°C).
  • By using salt and pepper season the chicken breasts on both sides.
  • Heat olive oil in a grill or stovetop pan over medium-high heat.
  • Cook the chicken breasts for about 4-5 minutes on each side until they are browned and cooked through.
  • Transfer the chicken breasts to a baking sheet.
  • Top each chicken breast with a slice of fresh mozzarella cheese and a few tomato slices.
  • Bake in the preheated oven for about 5-7 minutes until the cheese has melted and started to brown slightly.
  • Take the baking sheet out of the oven and garnish with fresh basil leaves.
  • Drizzle balsamic glaze over the chicken breasts.
  • Serve hot and enjoy!
