Ingredients

For the Pasta

  • 2 cups conchitas pasta
  • 1 tablespoon olive oil
  • Salt, to taste

For the Carne

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

For garnish

  • Fresh cilantro, chopped
  • Shredded cheese
  • Sour cream

Instructions

Cook the Pasta

  • Boil a large pot of salted water.
  • Add conchitas pasta and cook according to package instructions until al dente.
  • Drain the pasta and set aside.

Prepare the Carne

  • Heat olive oil over medium heat in a skillet.
  • Add chopped onions and garlic, sauté until softened.
  • Add ground beef, breaking it apart with a wooden spoon, and cook until browned.
  • Stir in diced bell pepper, crushed tomatoes, cumin, chili powder, salt, and pepper.
  • Simmer the mixture for 15-20 minutes, allowing the flavors to meld.

Combine Pasta and Carne

  • Add the cooked conchitas pasta to the carne mixture.
  • Toss everything together until well combined.
  • Adjust seasoning to taste.

Serve

  • Spoon Conchitas Con Carne onto plates or into bowls.
  • Garnish with fresh cilantro, shredded cheese, and a dollop of sour cream.
