Ingredients
1 pound boneless, skinless chicken breasts, diced
1 cup long-grain white rice
1 medium onion, chopped
2 carrots, peeled and sliced
2 celery stalks, chopped
4 cloves garlic, minced
8 cups chicken broth
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Prepare the Ingredients
Gather all your ingredients and equipment.
Dice the chicken breasts, chop the onion, slice the carrots, and chop the celery.
Mince the garlic, and measure out the rice, chicken broth, dried thyme, salt, and pepper.
Step 2: Sauté the Aromatics
Heat your large soup pot over medium heat.
Add a bit of oil and then add the chopped onion, carrots, celery, and minced garlic.
Sauté the vegetables until they become tender and the onion turns translucent, usually for about 5-7 minutes.
