- 1-and-a-half cups of all-purpose flour
- 2 teaspoons of white sugar
- 2 tablespoons baking powder
- 1/2 teaspoon baking soda 1/4 teaspoon salt
- Lightly beaten, one large egg
- Three teaspoons of canola oil (vegetable oil works too)
- (For serving) 1 1/2 cups of buttermilk and maple syrup
Step 1: Mixing the Ingredients
Mix flour, sugar, baking powder, salt, and baking soda in a bowl.
Separately, mix the egg, oil, and buttermilk.
Mix the wet and dry ingredients until no flour streaks remain.
The batter should be lumpy and thick, so don't over-mix it.
Wait 5 minutes before cooking the pancake batter. Resting the batter gives pancakes their amazing texture.
Step 2: Cooking the Pancakes
Heat a nonstick skillet or griddle while the batter rests.
Spray it with baking spray and add 1/4 cup of batter. This recipe makes 12 pancakes, so cook in batches.
Cook the pancakes for 1-2 minutes per side until golden. When the bubbles pop, flip the pancakes.
Serve with butter and maple syrup.
