Ingredients
For the Marinade
1 pound large shrimp, peeled and deveined
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
For the Sauce
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Additional
1/4 cup fresh parsley, chopped (for garnish)
Cooked pasta or crusty bread (for serving)
Instructions
Marinating the Shrimp
In a bowl, combine the shrimp with minced garlic, olive oil, dried oregano, salt, and pepper.
Allow it to soak up the flavors for a minimum of 30 minutes in the fridge.
Preparing the Sauce
In a large skillet, heat olive oil over medium heat.
Add chopped onions and garlic, sauté until softened.
Pour in crushed tomatoes, dried basil, dried oregano, salt, and pepper.
Simmer the sauce for 15-20 minutes, allowing flavors to meld.
Cooking the Shrimp
Remove marinated shrimp from the refrigerator.
Add the shrimp to the simmering tomato sauce, cooking until they turn pink and opaque (about 3-4 minutes).
Serving
Spoon the Don Peppe Shrimp Luciano over cooked pasta or serve with crusty bread.
Sprinkle fresh parsley on top for a pop of color and a burst of freshness.
