Ingredients

  • 2 lbs (900g) grated cassava
  • 1 cup coconut milk
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 1 teaspoon ground cinnamon
  • 1 teaspoon grated nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the grated cassava, coconut milk, brown sugar, melted butter, raisins, shredded coconut, cinnamon, nutmeg, salt, and vanilla extract. Mix the ingredients thoroughly until they are evenly combined.
  • Grease a baking dish with butter or cooking spray, then pour the cassava mixture into the dish, spreading it out evenly.
  • Put the baking dish in the preheated oven and bake for around 1 hour or until the top turns a golden brown color and the center is set.
  • Once cooked, remove the Cassava Pone from the oven and let it cool before cutting it into squares or rectangles.
  • You can serve the Cassava Pone either warm or at room temperature. It can be enjoyed on its own as a dessert or accompanied by tea or coffee.
