- 1 lb (450g) boneless, skinless chicken breast, diced
- 8 oz (225g) cauliflower florets
- 8 oz (225g) pasta (linguine or fettuccine work well)
- 1 packet Knorr Lemon Chicken Seasoning Mix
- 1 cup heavy cream
- 1 lemon (zest and juice)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
- Fresh parsley or basil for garnish (optional)
In a large pot, cook the pasta according to package instructions until al dente. Drain and set aside.
As the pasta cooks, use a skillet to heat olive oil over medium-high heat. Add the diced chicken and cook until browned and cooked through. Season with salt and pepper. Take the chicken out of the pan and keep it aside.
In the same skillet, add the minced garlic and cauliflower florets. Cook until the cauliflower is tender-crisp and slightly browned.
Reduce the heat to medium-low and add the heavy cream, Knorr Lemon Chicken Seasoning Mix, lemon zest, and lemon juice. Stir thoroughly and allow the sauce to simmer for a few minutes until it slightly thickens.
In the skillet add the cooked chicken and cooked pasta. Toss everything together until the sauce coats the chicken, pasta, and cauliflower evenly.
Garnish with fresh parsley or basil if desired.
