Ingredients

For Crust

  • 1 1/2 cups of graham cracker crumbs
  • 1/4 cup of granulated sugar
  • 1/2 cup of unsalted butter, melted

For Filling

  • 3 large egg yolks
  • 1 can (14 ounces) of sweetened condensed milk
  • 1/2 cup of fresh lime juice
  • 1/2 cup of pureed mangoes
  • 1 tablespoon of lime zest
  • 1/4 teaspoon of salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture is moistened and crumbly.
  • Take a 9-inch pie dish and press the mixture into the bottom and sides in it.
  • Bake the crust for 10 minutes until it is lightly golden brown. Let the crust cool and prepare the filling.
  • In a mixing bowl, beat the egg yolks until they are pale yellow and thick.
  • Add the sweetened condensed milk, lime juice, pureed mangoes, lime zest, and salt to the bowl and whisk until the mixture is smooth.
  • Pour the filling into the cooled crust.
  • Bake the pie for 15-20 minutes until the filling is set.
  • Allow the pie to cool to room temperature before refrigerating it for at least 2 hours.
  • Serve chilled and enjoy!
