Ingredients

  • 1 cup pure maple syrup
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups mixed nuts (walnuts, pecans, or almonds), chopped
  • 1/2 teaspoon sea salt

Instructions

Prep Work

  • Line a baking sheet with parchment paper.
  • Chop the mixed nuts and set them aside.

Prepare the Maple Syrup Mixture

  • In a medium saucepan, combine the maple syrup, granulated sugar, heavy cream, and butter.
  • Put the saucepan on medium heat, stirring consistently until the sugar completely dissolves.

Cooking the Mixture

  • Attach a candy thermometer to the side of the saucepan and let the mixture come to a boil.
  • Continue to cook until the thermometer reads 240°F (soft ball stage).

Add Nuts and Vanilla

  • Remove the saucepan from heat and stir in the chopped nuts, vanilla extract, and sea salt.
  • Mix thoroughly to ensure even distribution.

Shape and Cool

  • Spoon small portions of the mixture onto the prepared baking sheet.
  • Let the Maple Nut Goodies cool and set naturally at room temperature.
