Ingredients

For the Filling

  • 500g lean pork, finely chopped
  • 200g back bacon, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Pastry

  • 375g all-purpose flour
  • 185g unsalted butter, cubed
  • A pinch of salt
  • 1 egg, beaten (for egg wash)

Instructions

  • Prepare the Filling: In a bowl, mix the chopped pork, diced bacon, onion, garlic, sage, thyme, salt, and pepper until well combined.
  • Make the Pastry: In a separate bowl, rub the butter into the flour until it resembles breadcrumbs. Add a pinch of salt and enough cold water to form a dough. Divide the dough into two-thirds for the base and one-third for the lid.
  • Assemble the Pie: Roll out the larger portion of the pastry and line the pie dish. Fill it with the pork mixture.
  • Create the Lid: Roll out the remaining pastry and place it on top of the filling. Seal the edges by pressing them together, and make a small slit in the center to allow steam to escape.
  • Bake: Brush the top with beaten egg for a golden finish. Bake in a preheated oven at 180°C (350°F) for 40-45 minutes or until the pastry is golden brown and the filling is cooked through.
