Prepare the Filling: In a bowl, mix the chopped pork, diced bacon, onion, garlic, sage, thyme, salt, and pepper until well combined.

Assemble the Pie: Roll out the larger portion of the pastry and line the pie dish. Fill it with the pork mixture.
Create the Lid: Roll out the remaining pastry and place it on top of the filling. Seal the edges by pressing them together, and make a small slit in the center to allow steam to escape.
