Ingredients

  • 1.5 quarts mint chocolate chip ice cream, softened

For the Mint Chocolate Ganache

  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon peppermint extract

Instructions

Cake Base

  • Combine chocolate cookie crumbs, melted butter, and sugar in a bowl.
  • Press the mixture into the bottom of a springform pan to form an even crust.
  • Chill in the refrigerator while preparing the ice cream layer.

Mint Chocolate Chip Ice Cream Layer

  • Let the mint chocolate chip ice cream soften a bit.
  • Spread the softened ice cream evenly over the chilled cake base.
  • Cover with plastic wrap and freeze until firm.

Mint Chocolate Ganache

  • In a saucepan, warm the heavy cream until it starts to simmer.
  • Pour the hot cream over the dark chocolate chips in a bowl.
  • Add peppermint extract and stir until smooth.
  • Let the ganache cool slightly before pouring it over the frozen ice cream layer.

Final Assembly

  • Return the cake to the freezer and let it set completely.
  • Once set, gently take the cake out of the springform pan.
  • Garnish with additional chocolate chips or mint leaves if desired.
