1.5 quarts mint chocolate chip ice cream, softened
For the Mint Chocolate Ganache
1 cup dark chocolate chips
1/2 cup heavy cream
1 teaspoon peppermint extract
Instructions
Cake Base
Combine chocolate cookie crumbs, melted butter, and sugar in a bowl.
Press the mixture into the bottom of a springform pan to form an even crust.
Chill in the refrigerator while preparing the ice cream layer.
Mint Chocolate Chip Ice Cream Layer
Let the mint chocolate chip ice cream soften a bit.
Spread the softened ice cream evenly over the chilled cake base.
Cover with plastic wrap and freeze until firm.
Mint Chocolate Ganache
In a saucepan, warm the heavy cream until it starts to simmer.
Pour the hot cream over the dark chocolate chips in a bowl.
Add peppermint extract and stir until smooth.
Let the ganache cool slightly before pouring it over the frozen ice cream layer.
Final Assembly
Return the cake to the freezer and let it set completely.
Once set, gently take the cake out of the springform pan.
Garnish with additional chocolate chips or mint leaves if desired.
