Ingredients
4 boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
1/2 cup unsalted butter, melted
1/2 cup grated Parmesan cheese
1 cup cornflakes, crushed
Instructions
Marinate the Chicken
Place the chicken breasts in a bowl and cover them with buttermilk.
Let them marinate for at least 30 minutes to ensure tenderness.
Preheat the Oven
Preheat your oven to 400°F (200°C).
Prepare the Coating
In a shallow bowl, combine flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
Coat the Chicken
Remove the chicken from the buttermilk and coat each piece evenly with the flour mixture.
Melt the Butter
In a separate bowl, melt the butter.
Dip in Butter and Cornflake Mixture
Dip each floured chicken breast into the melted butter and then press into a mixture of crushed cornflakes and grated Parmesan cheese.
Bake
Place the coated chicken breasts in a greased baking dish.
Bake for 25-30 minutes or until the chicken is golden brown and cooked through.
