Ingredients

For the pastry

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter (cold, diced)
  • 1 egg (beaten)
  • ½ cup cold water
  • 1 tsp salt

For the filling

  • 1 lb ground beef or chicken
  • 1 medium onion (finely chopped)
  • 2 carrots (diced)
  • 2 potatoes (diced)
  • 2 hard-boiled eggs (sliced)
  • 2 tsp curry powder
  • 2 tsp thyme
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  • Prepare the Filling: In a pan, heat some oil and sauté the onions until translucent. Incorporate the ground beef or chicken and cook until it turns brown. Add carrots and potatoes, then season with curry powder, thyme, salt, and pepper. Cook until the vegetables are tender. Set aside to cool.
  • Prepare the Pastry: Mix flour and salt, In a large bowl. Add the cold, diced butter and use your fingers to rub it into the flour until it resembles breadcrumbs. Add the beaten egg and cold water, mixing until a dough forms. Divide the dough into smaller portions and refrigerate for 30 minutes.
  • Assemble the Meat Pies: Roll out the chilled pastry dough and use a pastry cutter to make circles. Place a spoonful of the cooled filling in the center of each circle, add a slice of hard-boiled egg, then fold the dough over to create a half-moon shape. Seal the edges with a fork.
  • Fry and Bake: Heat vegetable oil in a frying pan and lightly fry the meat pies until golden brown. Transfer them to a baking sheet and bake at 350°F (175°C) for 20-25 minutes or until the pies are golden and crispy.
