Ingredients

  • 2 chicken breasts
  • 1-and-a-half cup of tomato sauce
  • 1/2 cup of diced cucumber
  • Pepper, red, 1/4 cup
  • 1/4 cup chopped green bell pepper
  • 1/2 cup of shredded lettuce
  • Mayonnaise, 2 tbsp.
  • Two Tablespoons of Olive Oil
  • Oregano, 2 Tablespoons
  • A measure of black pepper equal to 1 tablespoon
  • The amount of salt is determined by individual preference

Instructions

Marinate the Chicken

  • Add 1 tablespoon of olive oil, 2 tablespoons of oregano, 1 tablespoon of black pepper, and salt to taste.
  • For 30 minutes, add the chicken breast to this marinade and let it marinate. However, you may also utilize them if you have leftover chicken.

Preparation

  • Let’s cut the vegetables while the chicken is getting ready to fry. Take every veggie, give it a thorough rinse, then pat them dry with paper towels.
  • All the veggies should be cut to the same size after the chopping board and knife are ready. Put them aside in different bowls.

Frying the Chicken

  • The chicken should now be fried because the marinating process is complete. Set the heat to medium-low and turn on the stove. Place an iron skillet pan on the stove. In the pan, pour 1 tablespoon of olive oil, and let it to heat.
  • Add the chicken and continue to cook it until it is cooked through or turns golden brown. Flip the chicken over often and cook both sides.
  • Once finished, remove it and allow it to cool. Once they have been divided into little pieces, set them aside in a basin.

Make the Optavia Chicken Salad

  • Take a large mixing bowl, add the chicken pieces, 1/2 cup lettuce, 1/2 cup tomatoes, 1/2 cup cucumber, 1/4 cup red bell pepper, and 1/4 cup green bell pepper, and mix well.
