- 1 lb lean ground beef
- 1 small onion, diced
- 1 cup diced bell peppers (assorted colors)
- 1 cup cauliflower rice
- 2 cloves garlic, minced
- 1 tsp olive oil
- Salt and pepper to taste
- 1 cup reduced-fat shredded cheddar cheese
- 3/4 cup unsweetened almond milk
- 4 large eggs
Preheat the oven to 375°F (190°C).
Heat the olive oil in a skillet over medium heat. Add the diced onion and bell peppers. Sauté until they start to soften.
Add the lean ground beef and minced garlic to the skillet. Cook until the beef is golden-brown and fully cooked. Season with salt and pepper.
