Ingredients

  • 4 large russet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup cooked black beans
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1/2 cup crumbled queso fresco or shredded cheese
  • 1/4 cup sour cream or Mexican crema
  • Lime wedges for serving

Instructions

  • Preheat your oven to 400°F (200°C).
  • Cut the potatoes into wedges or cubes, leaving the skin on.
  • In a mixing bowl, toss the potato wedges with olive oil, paprika, cumin, salt, and pepper until well coated.
  • Arrange the seasoned potatoes in a single layer on a baking sheet. For convenient cleaning, you have the option to cover the sheet with aluminum foil.
  • Bake the potatoes in the preheated oven for about 25-30 minutes, or until they are golden and crispy.
  • While the potatoes are baking, prepare the toppings: In separate bowls, set out the cooked black beans, diced tomatoes, diced red onion, chopped cilantro, crumbled queso fresco, and sour cream.
  • Once the potatoes are done baking, arrange them on a serving platter.
  • Let each person create their own Papas Locas by topping the potatoes with black beans, tomatoes, red onion, cilantro, queso fresco, and a dollop of sour cream.
