- 2 cups all-purpose flour
- ½ teaspoon salt
- ½ cup cold butter, diced
- ½ cup cold water
- Filling of your choice (cheese, meat, vegetables, etc.)
In a mixing bowl, combine flour and salt. Blend the cold butter into the mixture until it takes on the texture of coarse crumbs.
Gradually add cold water and knead until a dough forms. Cover and refrigerate for 30 minutes.
Preheat oven to 350°F (175°C).
Flatten the dough on a floured surface and create circular shapes by cutting.
Place a spoonful of filling on each circle, fold it in half, and seal the edges by pressing with a fork.
Arrange pastechis on a baking sheet and brush with egg wash.
Bake for 20-25 minutes or until golden brown.
