Ingredients
1 lb boneless, skinless chicken breasts, cooked and shredded
1 can of Rotel tomatoes with green chilies
1 can of black beans, drained and rinsed
1 can of corn, drained
1 onion, chopped
3 cloves of garlic, minced
4 cups of chicken broth
1 tablespoon of chili powder
1 teaspoon of cumin
1 teaspoon of paprika
Salt and pepper, to taste
For serving, Tortilla chips, shredded cheese, and sour cream
Instructions
In a large pot, sauté the chopped onion and minced garlic until translucent.
Add the cooked and shredded chicken, Rotel tomatoes, black beans, corn, chicken broth, chili powder, cumin, paprika, salt, and pepper to the pot.
Bring the soup to a boil and then reduce heat to simmer for 20-30 minutes.
Serve hot with tortilla chips, shredded cheese, and a dollop of sour cream.
