Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup chicken broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup heavy cream
  • Fresh parsley for garnish
  • Cooked white rice for serving

Instructions

  • Heat butter and olive oil in a large skillet over medium heat until melted.
  • Add diced onions, green bell pepper, and minced garlic. Sauté until softened.
  • Stir in diced tomatoes, chicken broth, Cajun seasoning, paprika, cayenne pepper, salt, and pepper. Simmer for 5 minutes.
  • Place the shrimp in the skillet and cook until they become pink and opaque.
  • Reduce heat, and stir in heavy cream. Simmer for an additional 2-3 minutes.
  • Sprinkle fresh parsley on top and serve the dish over cooked white rice.
