Ingredients
2 cups dried speckled butter beans
6 cups water for soaking
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 smoked ham hock for added flavor (optional)
Salt and pepper to taste

Preparations
Rinse the dried speckled butter beans under cold water.
Soak the beans in 6 cups of water overnight or for at least 8 hours.
Cooking
Heat olive oil over medium heat in a large pot.
Sauté chopped onions and minced garlic until translucent.
Add the soaked speckled butter beans and ham hock (if using) to the pot.
Pour enough water to cover the beans and bring to a boil.
Lower the heat, cover, and let it simmer for 1.5 to 2 hours, or until the beans become tender.
Season with salt and pepper to taste.
