For the Spicy Noodles
200g thin rice noodles
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon chili garlic sauce
1 teaspoon sugar
1 clove garlic, minced
1 teaspoon grated ginger
For the Spring Rolls
Rice paper sheets
1 cup shredded lettuce
1 cup julienned carrots
1 cup thinly sliced bell peppers (assorted colors)
1 cup bean sprouts
1/2 cup fresh cilantro leaves
Cooked spicy noodles
Instructions
Prepare Spicy Noodles
Cook the rice noodles according to package instructions.
In a bowl, mix soy sauce, sesame oil, chili garlic sauce, sugar, minced garlic, and grated ginger.
Toss the cooked noodles in the spicy sauce until well coated. Set aside.
Soak Rice Paper Sheets
Dip each rice paper sheet in warm water for about 10 seconds until it becomes pliable.
Place the softened rice paper on a rolling mat or damp cloth.
Assemble Spring Rolls
In the center of the rice paper, add a small portion of spicy noodles.
Layer shredded lettuce, julienned carrots, sliced bell peppers, bean sprouts, and cilantro on top of the noodles.
Roll and Seal
Fold the sides of the rice paper inward, then tightly roll the sheet from the bottom to the top.
Seal the edge with a little water.
Repeat and Serve
Repeat the process until all ingredients are used.
Serve the spicy noodle spring rolls with your favorite dipping sauce.
