Ingredients

  • 2 large taro roots, peeled and diced
  • 1 cup cooked black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  • Boil the diced taro roots until they are tender. Drain the water and mash the taro in a large mixing bowl using a potato masher or fork.
  • Add the cooked black beans, breadcrumbs, chopped onions, minced garlic, ground cumin, paprika, salt, and pepper to the mashed taro. Mix everything thoroughly until well combined.
  • Shape the mixture into burger patties of your desired size and thickness.
  • Heat the vegetable oil in a non-stick skillet or griddle over medium heat.
  • Cook the taro burger patties for about 4-5 minutes on each side or until they turn golden brown and crisp.
  • Once cooked, transfer the taro burger patties to a plate lined with paper towels to drain any excess oil.
