- 2 large taro roots, peeled and diced
- 1 cup cooked black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onions
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Boil the diced taro roots until they are tender. Drain the water and mash the taro in a large mixing bowl using a potato masher or fork.
Add the cooked black beans, breadcrumbs, chopped onions, minced garlic, ground cumin, paprika, salt, and pepper to the mashed taro. Mix everything thoroughly until well combined.
Shape the mixture into burger patties of your desired size and thickness.
Heat the vegetable oil in a non-stick skillet or griddle over medium heat.
Cook the taro burger patties for about 4-5 minutes on each side or until they turn golden brown and crisp.
Once cooked, transfer the taro burger patties to a plate lined with paper towels to drain any excess oil.
